metallicarocker9: By 1953, Troy Smith, a World War II veteran living in Shawnee, OK, had tried running a restaurant - twice. First there was a tiny eatery known as the Cottage Cafe. With only 12 counter stools and four booths, he could barely make a living for his wife and two children. He sold the little diner, bought a larger place and tried his hand at running a bigger operation. Troy's Panful of Chicken was successful to the point that Smith attempted opening multiple units. However, Oklahomans were not ready for that concept in the early 1950s, and Troy's Panful of Chicken faded quietly into history.
What did not fade from view was Smith's desire to own his own business. His dream was to run a fancy steak house in Shawnee, which he did for awhile. He acquired the steak house on a piece of property which also included a root beer stand. The root beer stand would prove to be a detour in his plan to become a successful restaurateur. Ultimately, he wanted to tear down the root beer stand, and make room for a parking lot for his steak house patrons. But until then, he would make a little pocket change selling hot dogs and root beer to any customer who drove on to the lot. The kink the root beer stand put in his steak house plans was that it was more profitable, it outlasted the restaurant, and proved to be a twist of fate known as the Top Hat Drive-In.
The Top Hat: Wired for Sound
The Top Hat was not unlike many other root beer stands of its day. Hungry customers would drive onto the lot, get out of their cars and order food through a walk-up window. When their orders were ready, they could eat it outside on a picnic table, or in their cars. Either way, it was a cash business, featuring easily prepared, cooked-to-order food such as hamburgers and hot dogs.
